Happy Birthday Baby!

Today is Griffin's 11 month birthday!  Only one month to go until his 1 year birthday bash! :)  I am working on getting the invitations out next week and finalizing all the plans.   He is so much fun lately.  Walking everywhere, waving and smiling at everyone, and being such a sweetie!  I packed into boxes all of his clothes he's outgrown so far.  It was such a trip down memory lane.  It has been so warm here and I realized that Griffin doesn't have any warm weather clothes!  Baby Gap was having a big sale and I had an additional coupon so we headed out to the mall.  We also stopped at Carters and OshKosh.  I bought 18 month sizes and got such great bargains!  He is set for the summer!!  And my goodness what CUTE stuff they have out right now!  I loved it.  Usually I hate shopping for a boy but it was wonderful yesterday!!  

We are off tomorrow for a quick trip to the lake and then a busy busy week next week.  I hopefully will take some pictures tomorrow and post Monday!  Have a great weekend!

On His Way!

Even though the little guy didn't get to come to ACU we brought some ACU back to him!

And more walking!  Jordan hasn't been home in time lately to help me film so this will have to suffice for now!

Happy Birthday to Me!

I had a great birthday!  Full of a yummy dinner at Mico with Mom and Jo, calls from lots of special people, cards that said just the right thing, and of course presents!!  My cake was just as I requested it.  White cake, white icing, and purple writing!  Griffin wasn't sure about the candles.  He wouldn't take his eyes off of them!  He is still walking everywhere and is really getting the hang of it.  I feel more than comfortable saying he is a walker now because he crawls only 10 percent of the time now.

Already this morning I have spent 30 minutes with the water billing company.  Trying to convince them that no I did not call last month when my bill was wrong AGAIN and tell you that I live in two places.  No I am not responsible for the bill in both places!  UGGHH!  I think we got it all fixed but then again I thought that last month too!  I guess time will tell.  Thank goodness we are soon moving!!! :)

Change of Plans

We have a change of plans!  Due to Griffin cutting teeth, running a little fever, alternating throwing up and having diarrhea we will be leaving him here for the weekend with my sweet mom.  We just thought the closer he follows his schedule and the more familiar the things the better.  So we are off to enjoy Sing Song and Griffin will be having a great time with Granna!

We Have a Walker!

Griffin has been "taking steps" for a little bit now, but yesterday in mom's kitchen he finally put it all together and walked!  He walked back and forth between us a few times.  Then this morning as we are playing in his room he decides to start walking across the room!  I like any good mom of course run to get the video camera.  He was kinda tired of it by the time I started rolling but here are a couple of clips!!  He's still really shaky and would much prefer crawling but I am marking it down in the baby book as first steps!!  Ps.  I can't wait until Jordan is home to help me video.  You miss half of the walking because I am too slow to scoot back and tape while he is already off walking!  Oh well.  You get the idea!

So Excited!

I have no idea why this is in this font, or why it has highlighted my words yellow. Oh the joys of blogger. You get the idea.
Is anyone else SO EXCITED for Sing Song. It has been a full year since we have been back to Abilene and I am counting down the minutes! This is Griffin's first trip to
ACU and we can't wait to show him his future school. I am having a mini birthday party at my favorite, LOS ARCOS, on Saturday afternoon! There was nothing in the world I could think of that sounded better. Side note- How can I possibly be turning 27?? Ughhh. So yes, SEE YOU AT SING SONG!!! And of course, we hope Galaxy pulls it off this year again. Even though they never won when Jordan was actually in the act we still want them to win every year!!

First Haircut

Today Griff went for his first hair cut at a darling place at Park and Preston.  He did SO GOOD.  Well except until she started using the clippers.  He wasn't sure about those!  Here are a few pictures and video.

Mexican Fiesta

I put up my Easter wreath the my mother in law gave me last year.  A lot of the paint on the eggs came off but I think it makes it look vintagey.  





On Friday we had my mom over for dinner and I tried out a new recipe.  
It was made in my crock pot which had for the past 3 years only ever been used to make queso.  I was super pleased with the results and how EASY it was.  Mom and Jordan loved them too!  Here is the recipe and a picture of my table.

Pulled-Pork Tacos
2 cups store-bought salsa, plus more for serving 
2 tablespoons chili powder 
2 tablespoons dried oregano 
2 tablespoons unsweetened cocoa powder 
Kosher salt 
1 2 1/2-pound boneless pork butt or shoulder, trimmed of excess fat 
18 corn tortillas 
1/2 cup fresh cilantro sprigs 
3/4 cup sour cream 
1 lime, cut into wedges 

In a 4- to 6-quart slow cooker, combine the salsa, chili powder, oregano, cocoa, and 1 teaspoon salt. Add the pork and turn to coat.

Cook, covered, until the meat is tender and pulls apart easily, on high for 4 to 5 hours or on low for 7 to 8 hours.
Twenty minutes before serving, heat oven to 350° F. Stack the tortillas, wrap them in foil, and bake until warm, about 15 minutes.
Meanwhile, using 2 forks, shred the pork and stir into the cooking liquid. Serve with the tortillas, cilantro, sour cream, lime, and extra salsa.
Tip: When using a slow cooker, resist the urge to lift the lid until the dish has cooked the minimum amount of time specified in the recipe. Each peek allows heat to escape and can increase cooking time by as much as a half hour.

 
Yield: Makes 6 servings 
We went to church and lunch this morning with Clark and Linds and my boys looked so handsome!  Don't you think?

Happy Valentine's Day!

Happy Valentine's Day! I worked today since we will be out of town the next two weekends so I could fulfill my "two weekends a month" at the hospital. We only had one patient and then I gave a CEU class on death, dying, grief, and palliative care. Ironic yes...Even more ironic is that it was at the hospital in Lewisville, the very same hospital they took Daddy to. Oh well. I was fine and felt like I did a good job. So, since I was working today, Jordan and Griffin had a daddy/Griffin day. Everything went smoothly except a little mishap with the bookcase. Apparently Griff was pulling his books off the shelf and then lost his balance and hit his face on the wood. It is just a small scratch though and Jordan says he hardly cried at all. So it's all good. :)

Griffin's favorite thing right now is to be chased. He gets down and crawls a bit, then turns around and giggles and waits for you to start crawling after him. It is sooo cute! Griffin wore his special frog house shoes that the twins gave him and looked adorable in them. Jordan thinks they kept his feet nice and toasty today.


He LOVES to give hugs and kisses!












Thank you all so much for all the Valentines Griffin got to help him celebrate his first year! He loved opening the envelopes and we looked at all of them!

Look Out!

We have had a wonderful WARM winter weekend! And we hope you have too! While Jordan was at the gun range I went shopping with my momma! She bought me these super cute Valentines Day kitchen towels! I love them! I will most likely even leave them up a little PAST V-day!

This picture of sweet Griff was taken by our very talented photographer friend Dabney. I love the way his eyes look. The black and white was such a good choice!

And in the BIGGEST news....Griffin has taken 6 steps (total) on his own! He pulls up on things, then lets go and will step towards you. 9 times out of 10 he falls on his bottom before he even takes one step...But 3 times now he has walked two steps in a row towards us!! We know we still have a while before he is a "real" walker. But we are loving this adventurous stage! When we hold his hands to help him walk, he much prefers to start running...So I have a feeling I am going to be REALLY busy! He is getting SO good at standing and balancing alone. This picture is the perfect example of his "proud peacock" look. LOVE IT.
