Cooking Day 2

Slow-Cooker BBQ Pork Sandwiches

Slow-Cooker BBQ Pork Sandwiches recipe

what you need

1 boneless pork shoulder (2 lb.)
3 onions, sliced, separated into rings
1/2 cup KRAFT Original Barbecue Sauce
8 kaiser rolls, split
8 KRAFT Singles

make it

PLACE meat in slow cooker; top with onions and barbecue sauce. Cover with lid. Cook on LOW 8 to 10 hours (or on HIGH 4 to 5 hours).

REMOVE meat from slow cooker; cut off and discard excess fat. Chop meat into small pieces or shred with fork. Return to slow cooker; stir to coat with sauce.

FILL rolls with meat mixture and Singles just before serving.

Three Months...

Oh sweet girl!! How is it possible that you are three months old? Our time is flying by and I feel like this month you have turned the corner from being a newborn to being a baby girl! You are still the sweetest, most laid-back baby around and for that I am truly greatful! You don't have a checkup this month so I have no idea how much you weigh. But I sure feel like you are getting bigger every day. You are fully in 3 month clothes and even some 6 months! The dress in this picture is a 6 month size and a gift from your Granna. Here are some things you have been doing this past month:
-You take three loooong naps a day. 1 right after your first feeding, 1 mid morning, and 1 in the afternoon while your brother naps.
-You go to bed for the night around 9:30, and wakeup between 7-8. I usually just get you up when Griffin gets up.
-You are getting better head control and love to be put in a sitting up position. You still hate tummy time but you like to sit in your bumbo.
-You stopped using your swaddle this week.
-You are putting a lot of weight on your legs and love to be standing up and looking at us.
-You still hardly ever cry and mostly just laugh and smile your big smile at us.
-You love for us to mimic your noises back to you.
-You watch your brother with "big eyes" and startle at his loud noises.
-You rode your first airplane this month going to visit Auntie Kelsey and Uncle Gabe in Seattle. You might ride another one in 2 weeks to go to a birthday party but I haven't decided yet.
-You eat every three hours except over night.

****Update : I weighed Gracie this morning when I was at the dr with Griffin. She weighs a whopping 13.6 lbs! She has gained 2.4 lbs this month! You go girl!****
We love you with all of our being Princess Grace! Happy 3 month birthday!!!

Random

I love this picture of Gracie before church on Sunday. She looks so cute all bundled up.






Griffin and I have been taking full advantage of the nice weather. We love playing outside during Gracie's morning nap.
I made this recipe from Kraft Food and Family last night. It was VERY good. And VERY easy. The two best qualities in a recipe. Jordan gave it the seal of approval and told me I was allowed to make it again sometime! And it makes a lot so we both had a large helping last night and leftovers for all of our lunches today. Yumm... I am trying to cook everyday this week. Except tonight (jordan has class), and Thursday night (Griffin's fundraiser at chuck-e-cheese). So 5 out of 7 nights. There is really no reason behind it, I just hardly ever cook and I got a new Food and Family magizine with lots of recipes so I am trying them all out! I will post the ones that we like.

Chicken & Pepper Pasta Bake recipe

what you need

3 cups rigatoni, uncooked
1 lb. boneless skinless chicken breasts, cut into bite-size pieces
1 each large red and green pepper, coarsely chopped
1 jar (24 oz.) spaghetti sauce
2 oz. (1/4 of 8-oz. pkg.) PHILADELPHIA Cream Cheese, cubed
1 cup KRAFT Shredded Mozzarella Cheese
1/4 cup KRAFT Grated Parmesan Cheese

make it

HEAT oven to 375ºF.

COOK pasta as directed on package. Meanwhile, heat large nonstick skillet on medium-high heat. Add chicken; cook and stir 2 min. Add peppers; cook and stir 3 min. Stir in spaghetti sauce; simmer 6 to 8 min. or until chicken is done and peppers are crisp-tender, stirring occasionally. Add cream cheese; cook and stir 1 to 2 min. or until melted.

DRAIN pasta. Add to chicken mixture; toss to coat. Spoon half into 8- or 9-inch square baking dish. Top with 1/2 cup mozzarella and 2 Tbsp. Parmesan. Repeat layers.

BAKE 20 min. or until heated through.

Excited about...

This little girl holding her head up sooo well!
Smocked Dresses. One of my favorite things about having a little girl. I was given 2 of these as gifts and the other 5 I have gotten at my favorite local resale shop. The most expensive one was $5.99. There's a feltman and a bailey boys in there! I haven't really bought Gracie any clothes yet as she was thankfully given so much. But when I see these I snap them up. They range in size from 6 months to 18 months so she has lots to grow into!
Christmas outfits! She has these 3 so far and also has a Thanksgiving dress. I am keeping that one a secret though because it's so darn cute!
Things I am not liking right now.
-The cold/rain combo. Not ideal for a little baby
-Griffin's first nightmares. So far we've had one about lions and one about bugs. Not fun.
-Spit up. Everywhere. Yuck
-My baby monitor broke. Jordan did it. Enough said.
